Food safety monitoring data in the European Union (EU) is scattered across over 1,000 files (hundreds of gigabytes), making access and analysis difficult. This paper introduces the Comprehensive European Food Safety (CHEFS) database, which integrates data from the European Food Safety Authority (EFSA). CHEFS contains data on pesticide residues, veterinary drug residues, and chemical contaminants from 2000 to 2024 and can be used to analyze changes in monitoring activities, the most frequently tested products, non-compliant products, the most common contaminants, and differences between countries. This presents the potential of CHEFS as a centralized data source and strategic tool for food safety policy, research, and regulation.
